Tandoori salmon salad with spinach, cucumbers and pickled onions

Hello my lovely readers! Today’s post is a guest post I wrote for Leanne from Healthful Pursuit. She’s a Canadian Holistic Nutritionist, yogi, athlete, recipe creator, and substitution nerd who loves remaking recipes for people with allergies and dietary restrictions. Her site has a WEALTH of great tips and recipes for people looking to adopt a more healthy lifestyle.

………………………….

I was so excited when Leanne approached me to write a guest post for her blog! I came across Leanne’s blog last year when I was looking for recipes for guilt-free desserts and I’ve been absolutely hooked since then. She is my go-to resource for healthful tips and recipes, but what I look forward to the most are her inspirational posts. She is one truly inspiring woman and I’m glad to have “met” her through blogging.

When Leanne asked me to write a guest post, I immediately started thinking about what I was going to make. I wanted to make something extra special for her and came up with a few ideas for dessert. But things didn’t work out in the kitchen as expected! Isn’t it a shame that a concept that sounds great in your head doesn’t seem to work out so well when you try it out in the kitchen? Ahh…the unpredictability of recipe testing! Anyways, since Leanne is going to India, what could be more apt than a dish inspired by Indian cuisine? So I came up with this simple and delicious tandoori salmon salad with baby spinach, cucumber and pickled onions. And to top it all off and to cut out some of the heat, I added a few dollops of a cilantro-yogurt sauce. Doesn’t that sound like a scrumptious spring salad?

Cayenne shrimp with a tomato & yellow pepper sauce + chickpea pan bread

You’re either a fan of shrimp or you’re not…Growing up, I hardly ate shrimp because my mother didn’t like how it looked – tails and all. But now that I’ve been cooking for myself, I have a new found respect for this ingredient. It can turn something mundane into something special. I realized I haven’t blogged about a main dish in quite some time now, so for this week we have an Italian-inspired dish that has cayenne shrimp served with a tomato and yellow pepper sauce. All topped off with some crumbled goat cheese and parsley. On the side – a simple chickpea pan bread that can be cooked up in minutes!

Beauty Eats-Roasted carrot and cauliflower soup

Today’s Beauty Eats recipe is about healthy comfort food. If you’re a new reader, you might be wondering what the Beauty Eats series is all about. The image on the left sums it up perfectly – it’s all about eating skin-friendly ingredients in delicious ways.

January can be a rather dull month since the holiday festivities are over and it’s the dead of winter. The best way to brighten things up on a cold, dreary day is with some colourful comfort food. Personally, I love the thought of warming up with some vegetable soup on a weeknight since it doesn’t require much work and you’ll get a few servings of veggies too. We all know how hard that is! This bright orange soup is made with roasted carrots and cauliflower, but since plain vegetable soup can get a little boring sometimes, I took some inspiration from the East. The soup also includes fresh ginger and coconut milk! How’s that for some fusion food?  And to top it off, this soup is chock full of skin-friendly ingredients. Read on for the recipe and see what Connie from the Beauty Nerd has to say about this soup.

Beauty Eats- Nuts about candy canes

Today’s Beauty Eats recipe is about adding some candy cane sparkle to chocolate dipped dried fruit and nuts. If you’re a new reader, you might be wondering what the Beauty Eats series is all about. The image on the left sums it up perfectly – it’s all about eating skin-friendly ingredients in delicious ways.

The holidays are almost here and I’m excited about all the great food I get to enjoy, but I’m also worried about the inevitable holiday weight gain. I think it’s already started! Moderation is one way of keeping the pounds off, but eating holiday foods shouldn’t always be about cakes and cookies and other “unhealthy” treats. So is it possible to make something healthy that’s delicious too? Of course it is! That’s how these chocolate and candy cane coated gems came about.

Beauty Eats-Choco-coco truffles with cherries

I’ve been trying to eat healthier for the past few months, but sometimes it’s hard, especially with the holiday season approaching. How can you resist all the food the season has to offer? Especially the dessert! I have a major sweet tooth and there was a time when I would eat a whole apple pie for dinner. Not the best idea now, is it? I certainly don’t do that anymore, but I find it hard to satisfy my sweet tooth. What’s a girl to do when a sugar craving hits? The answer: decadent chocolate truffles, but in a healthier avatar.

Move over nutella-meet chocolate-coconut butter…

Hello my lovely readers! I have to apologize for being so erratic with my posts lately. I’ve been working on the holiday issue of Flavour Fiesta magazine and it’s taking up most of my time. It’s shaping up to be an awesome issue with more recipes and tips than the last one. Stay tuned!

In the meanwhile, I’m leaving you with a recipe for chocolate-coconut butter, which has quickly become a replacement for my nutella addiction. Move over nutella – I’m addicted to coconut butter now. And the good thing, it’s actually a lot healthier!

Coconut butter isn’t anything new, but I had no clue what it was until last month :$. I guess I’m not as “informed” as I should be! It’s basically shredded coconut that as been blitzed into a smooth and ultra-creamy “butter”. It can be mixed with a number of different things to create a signature butter. My favorite is chocolate-coconut butter. 2 ingredients – instant bliss!

Beauty Eats- Berry-banana smoothie with goji berries

There’s nothing better than a delicious smoothie to start the day. It’s quick, easy and chock full of nutrition if you choose the right ingredients. I usually have a strawberry-banana smoothie on the days I don’t have time to really sit down and eat. Isn’t it so much easier just to drink your breakfast when you’re struggling to make it out the door in time? The problem with smoothies is that they can get a little boring after a while. So to keep things fresh and interesting, why not try some unusual ingredients?

Beauty Eats- Mulled cranberry-apple cider

It’s cranberry season! And since Thanksgiving is just around the corner for our Canadian readers, Connie (from the Beauty Nerd) and I knew we had to make something with cranberries. They are wonderfully tart with just a bit of sweetness that works well in not only cranberry sauce but a variety of desserts such as tarts or pudding. But we all know, you’ll be eating a lot this weekend, so why not try something with cranberries that’s both warm and comforting?
