The holidays are almost here and I’m excited about all the great food I get to enjoy, but I’m also worried about the inevitable holiday weight gain. I think it’s already started! Moderation is one way of keeping the pounds off, but eating holiday foods shouldn’t always be about cakes and cookies and other “unhealthy” treats. So is it possible to make something healthy that’s delicious too? Of course it is! That’s how these chocolate and candy cane coated gems came about.

Creamy rice pudding with raisins and almonds
Rice pudding is a dish that is made all over the world with different variations. In India it’s known as kheer if it’s made with rice grains and phirni if it’s made with ground rice. In some countries in the Middle East, they use rice powder to make a dish called mahalabiya, which has a custard-like consistency. My recipe is inspired by mahalabiya, but with more familiar Western flavours of cinnamon and raisins.
This is a quick and easy recipe which will definitely satisfy that sweet tooth! And to top that, it’s low fat (so feel free to indulge a little more.)
