Banana bread with dates!

So what do you do when you have a bunch of extra ripe bananas lying on your counter-top? Banana bread! But you know me, the recipe has got to have a twist. This is a yummy banana bread with dates that is surprisingly healthy too!

 

I always end up buying too many bananas! After a few days, as they turn darker and darker, I wonder why I bought so many in the first place. Will I ever learn?

Milkshakes are a great way to use ripe bananas, but the best way in my opinion is to make banana bread. It’s something that will satisfy your sweet tooth at any time of the day, whether it’s dessert after dinner or breakfast with a glass of milk.

Lazy crazy weekend sandwich -grilled cheese with mushrooms & pesto!

The weekend is here! It’s a great time for me to whip up new creations in the kitchen, but sometimes I’m just plain lazy.  Today was one of those lazy days. I decided to have an afternoon nap with the sun shining in – it was awesome! But I woke up a few hours later starving. I didn’t want to spend time cooking, so I made this easy grilled cheese and pesto sandwich. It’s the yummiest sandwich I’ve had in a while and the best thing is, it doesn’t take long at all!

 

I’ve never made pesto at home and I’m sure fresh pesto would taste great in this recipe, but I used store-bought pesto for this sandwich.  Afterall, this is the lazy crazy sandwich!  I usually add tomatoes to my grilled cheese sandwiches, but mushrooms taste so much better with the pesto. Try it out!
